Delicious cookies topped with an Andes Mint.
Ingredients
3/4 C butter (this can be cut down to one stick)
1 1/2 C brown sugar
2 Tbs water
2 C chocolate chips
2 eggs
2 1/2 C Flour
1 1/4 tsp. Baking soda
1/2 tsp. Salt ~ optional

Preparation
Melt butter & brown sugar in a big sauce pan; stir until dissolved. In separate pan, melt chocolate chips & water, add to butter mixture. Add in eggs, blend/stir, add in remaining ingredients ( dough will be soft & a little greasy from the butter) Chill dough for an hour, roll into balls about a quarter size. Bake at 350 for ten minutes. Cookies will be soft, place an Andes mint on top of cookie & let it melt, spread the mint once it’s melted over the entire cookie.
Let dry on counter before placing into a container. Will make 5 dozen cookies.
