You Got This!
You've never met a better, brighter riff on the classic Broccoli Caesar Salad.
Ingredients
2 anchovy fillets
2 garlic cloves, thinly sliced
¼ cup lemon juice
2 tsp. Dijon
1 egg yolk
½ cup Extra Virgin Olive oil
3 Tbsp. grated parmesan
2 heads broccoli
½ of a Napa cabbage

Preparation
Mash the anchovies and garlic into a smooth paste. In a large bowl, whisk together the anchovy paste, lemon juice, mustard and a big pinch of kosher salt. Add the egg yolk and whisk until smooth, then slowly add in the oil, whisking constantly. Once emulsified, whisk in grated parm and a good amount of black pepper.
Chop the broccoli florets into small bite sized pieces and thinly slice the cabbage. Add to the dressing, mix to coat, and let sit for at least 10 minutes.
When ready to serve, top with shaved parmesan.
